Vanilla Cupcakes

As promised, with reference to my earlier Orange Chocolate Cupcake post, here is my Vanilla Cupcakes using a different recipe.

Vanilla Cupcakes

2 cups sifted cake flour (I've used normal flour which resulted a denser texture)
1 cup castor sugar
2 tsp baking powder
1/2 tsp salt
1/2 cup butter, softened
1/2 cup milk
2 eggs
1 tsp vanilla essence

Whisk together flour, sugar, baking powder and salt. Using electric mixer on low speed, mix in butter, milk, eggs and vanilla essence. Beat on high speed until smooth, about 2 minutes.

Spoon into 12 paper lined or greased muffin cups, filling about 3/4 full. Bake in centre of oven at 190C about 18n minutes or test by inserting a skewer. If it's clean, then it's cooked. Transfer to rack and let cool completely.

I've chose not to iced them but feel free to do so.

  1. Yum! If you don't ice them, you can have them with a bit of strawberry jam, tastes just as nice.

  2. boo, i din ice it bcos i worried the children will smear the ice all over the host house hehehe... the crumbs would have them a ball of time to clean hehehe
