How To Avoid "Roast Chicken" Moments

This post is specially dedicated to Kenny Mah (Life for Beginners).

Well, if you have read Kenny's latest post, you would have come across his "roast chicken" moments. Now, to prevent another one of those moment, I've written specific instructions on how to avoid such moment :p Kenny, I hope this helps.

You see, I've brought Mango Royale for dessert to PureGlutton's party and it's the easiest dessert one can cough up for say potluck parties with minimal equipment you have in your kitchen. I've done some tweaking to this recipe and it's quite versatile and you can't go wrong, well unless you read the recipe wrongly!

So here's the step-by-step method and ingredients (for kitchen noobs):

Ingredients
  • About 1 kg of fresh ripe mangoes (about 3-4 medium sized ones)
  • 100 ml sweetened condensed milk (in Malaysia they're now known as sweetened creamer/krimer manis)
  • 250 ml all-purpose cream/whipping cream/thickened cream also works (they come in UHT packets)
  • 10-15 McVite's digestive biscuits but I've used about 20+ Tiger marie biscuits for a crunchier base (amount depending on the size of your container)
  • half a cup of melted butter

Step 1
Place the biscuits into a sturdy plastic bag (ziplock but I like to use the bag from bread loaf like Gardenia/High5). Bash them up with rolling pin or back of saucepan/frying pan into crumbs.

Step 2
Place the crumbs on the base of your container (plastic ones will do). Drizzle melted butter all over and mix well. Use your fingers and lightly pat them down. Try not to compact the crumbs, otherwise it's very hard to cut through. Leave this aside.

Step 3
Holding a whole mango, cut both sides down the midddle. Take the mango half and use a spoon to scoop the meat out from the skin. Place the mango halves onto the crumb base. You may use the middle portion to fill up the empty space in between and also for the topping.

Step 4
With a wire whisk (if you don't have any, just use a pair of chopsticks, spoon also can), blend together the cream and sweetened condensed milk. Pour over the mango halves. You can sprinkle some chopped mangoes over the top.

Step 5
Cover tightly and freeze for at least two hours or until firm. Remove from freezer for about 5 minutes or more, then use a knife and cut them into squares before serving.

Viola!!! A very simple dessert that anyone can make to avoid "roast chicken" moments :D

BTW, if mangoes are not in season, you can use other options like tinned longan (which I've done before), lychees, tinned mandarin orange segments, peaches, strawberries etc... the list is rather limitless.

It's Mango Season!!!

Hallloooo... (I can hear echoes of it LOL). It has been a week and cobwebs seem to be forming at the corners of this blog. To those who discovered us via Sunday Time's article, welcome to Babe in the City - KL! Sorry to left you guys waiting for a new post. Babe_KL went thru an extremely stressful week and from the sound of it, I will be rather busy for the next few coming months.

It's no doubt mangoes are in season now as I could hear the fruit sellers at the wet market yelling out loud peddling their mangoes trying to outwit each other by giving the best price. The super/hypermarkets are also filled with them.

I've got hold of some mangoes earlier in the season and some of them ripening so quickly that I decided to make this Mango Bread which I've faithfully printed from Celine (Life, Love and Me) since last year but never got a chance to make any when mangoes went out of season. She got the recipe from Wandering Chopsticks and seems like a lot of bloggers are raving over this mango bread.

I've to say this bread is really good when it's fresh as it is very moist and fragrant. The only downside I find the soda taste is a bit too strong, might have to do a bit of tweaking there for me.

Banana and Mango Smoothie Turned Popsicle

Kuala Lumpur's weather is still freaking hot but thank goodness mango season is still on. I've in stock frozen mango in my freezer. Not only that, I've some frozen bananas as well. Yeah I usually freezes bananas to prevent them from being over-ripen.

This round, I blended the mangoes and bananas with some milk (need this to run the blade) using a normal blender, can't use the handheld as the frozen fruits were too hard since I did not remove them from the freezer to sit out for a while. I poured out into 3 glasses and I still have some left. So I took out my popsicle containers and pour in the smoothie. My boiboi and I were enjoying the popsicle a few hours later after they turned solid. Have to finish these quickly as they contained milk.

Felt instantly refreshed!

'Tis The Season For Mangoes

What to do when you're overloaded with mangoes and need to use them up fast before they become mushy and soft? Here are some ideas to use them all up ;-)

Those who have been following my blog for a while would have came across a delectable dessert, Mango Royale. It's super easy to fix and it's a fool proof. Best part is... NOBODY could resist this dessert! I have a few tubs of these in my freezer at the moment.

How about turning a pav to a Mango Mania version???

Mango and Passion Fruit Pavlova

I folded in some pureed mango into the cream and topped the pav with loads of mango cubes and passionfruit. Looked messy huh? Short of naming this Yellow Yellow, Dirty Fellow :p

After all these sinful delights, guess what??? I still have loads of mangoes left behind, yeah I know it's absurb. I didn't buy them but my MIL have been supplying us every few days! So the next best thing to do is to cut them up into cubes and freeze them. Try not to lump everything into one big container, spread them out in smaller ones so that you don't need to use the whole lot up in a batch.

For frozen mango cubes, I turned them into smoothies. Just be creative! The best part is, you don't need to add crushed ice into the blender. I was lazy, so I used my handheld blender and whizzed frozen mango cubes and frozen strawberries (left over as well and I didn't want them to rot in the fridge heh) with some low sugar soy milk. We have some yummy hearthy goodness all in a glass. In place of soy milk, you can use plain yoghurt, milk or juices.

Otherwise, mangoes can be use up in bakings as well. You can try this Mango Teacake or Skinnymum's Mango Bread. For savoury, try her Mango Chicken or perhaps turn them into salads. The list is endless... all one need to do is be creative.

Mango Royale

Long ago before I could find another Malaysian food blogger in my links... I was busy reading food blogs from all over world. Sassy's blog Pinoy Cook is one of them. I had always admired a busy lady like her could ever have so much time to spend in the kitchen dishing out so many lovely Pinoy dishes. I've learnt so much about Filipino's food from her blog.

This Mango Royale is one of the recipe I had always wanted to try out but somehow I never got round to it. I made a trip to Imbi Market recently for breakie and couldn't resist taking a walk around the fruits stalls. Hmmm seems like mangoes are in season now since every stall is busy promoting them. I bought 2 bagfuls of fruits and of course loads of mangoes too.

With so many mangoes on hand, I suddenly recalled this Mango Royale dessert and proceeded to dig out the recipe. Checked the fridge and I have all the ingredients needed.

I've reduced the portion by using only 50ml condensed milk with 200ml of cream ratio and used crushed digestive biscuits instead. Feel free to adjust the milk to control the sweetness that you would prefer. There was another recipe that Sassy have perfected using crushed graham crackers but I can't seems to find the link but nevermind, just use crushed digestive biscuit will do. You can replace the mango with strawberries or maybe some other fruits that tickled your fancy.

One tip... I did not follow Sassy's recipe asking to press down the crushed biscuits using hands but instead I used the back of a spoon and oh my I really compacted them which is totally a big booboo. The layer of biscuit became very hard after storing in the freezer LOL!!! Yup, even after defrosting for 30 minutes. *Ahem* so lesson learnt here. I've followed her advice though in scooping the halved mangoes with a spoon and used them like it is without cutting them further.

Once done, you might need to remove from the fridge for a while like maybe 10 - 15 minutes before cutting them into pieces for serving. As it turned out... it's one of the best dessert I've tasted in a long long time. The creamy bits complimented the sweet mangoes and seriously they're very very very addictive!!! My guinea pig can testify on that since he has not been saying good things about my cooking of late hehe... check out how mine looked like...
