Ricotta Cheese Making Class @ Just Heavenly's The Baking Barn

It has always been fun to be in the company of Nigel Skelchy. His laughter is rather infectious teehee. If you don't already know, Nigel is the other partner apart from the talented Allan Yap of Just Heavenly, nehhh the cake shop that sells sinfully delicious cakes and desserts! A quick note here - they have recently started taking orders online and yes you can even make the payment online via their website. Start browsing the website and put in your order. (Disclaimer: I do not wish to be blamed if you wet your keyboard with your drool nor behaving indecently by licking your screen :p whilst you browse the website.)

Nigel Skelchy at work

At about the same time, Just Heavenly started their baking school - The Baking Barn, helmed by Nigel himself. Be sure of a good 3 - 4 hours of fun with him. Classes are held on Thursdays (9.30am - 11.30am) and Saturdays (2.00pm - 4.00pm) but do add in another hour to savour your creations together with coffee and tea. Classes are held in the HQ at Bangsar, just up the road from Bangsar Village.

The classes are semi-hands on with everyone getting a turn at things. No doubt one can search for recipes online but nothing beat having to attend a class as there are a lot of "unwritten" knowledge that will be imparted by the gurus.

Ingredients

I've attended Make Your Own Cheese - Ricotta which is actually Part 2 of the cheese making classes. How to make mascarpone was taught in Part 1. At The Baking Barn, one mother recipe will be taught and from there 2 - 3 cakes or desserts will be created. So at this class we were taught how to make ricotta cheese and from there it spins off to a Berry Ricotta Cheesecake, Ricotta Kisses, Ricotta Pancakes and a Cinnamon Honey Ricotta Spread.

Baking Barn class in action

We were first shown how to make the ricotta and we were spilled with the economics and sciences of making your own ricotta. Did you know you can make your own ricotta with just half the price of a tub of ricotta??? I like it when I'm supplied with lots of tips and substitutes if so happen you do not have the equipments in use ie. candy thermometer, food processor, cheesecloth etc.

ricotta collage

Next Nigel showed us how to make the cheesecake. Looks easy peasy hehe cos we're not making it on our own but with the help of a few lovely ladies. This cheesecake is baked in a hot water bath. We were also taught how to dress up the cake by making strawberry coulis and balsamic drizzle. Due to time constraint, whilst the cake is baking in the oven, Nigel has a cooled down cake to continue the class. He plonked a bunch of hulled strawberries in the middle of the cake before pouring the coulis on top. He even showed us the trick to make the coulis flow down sexily on the side of the cake. Next up, the cake was sliced before drizzling some reduced balsamic over.

ricotta cheesecake collage

As we dig in, Nigel explained to us that this is not the creamy style cheesecake but more like Italian. I can say it's not smooth and creamy but I really like the slight crumbly texture and it doesn't taste heavy at all! Kind of a light cheesecake I would say, nice :D

Ricotta Cheesecake with Strawberry Coulis & Balsamic Drizzle

Ricotta Pancakes were next. As Nigel was explaining to us how to fry up pancakes that are crispy on the outside using lots of oil and butter, we urged him to do just that since I guess most of us would never do that at home hahaha. The pancake batter is somehow like being shallowed fried and I got to finish up frying the pancakes.

Me frying up Ricotta Pancakes (BoiBoi took this pic)

Some honey is drizzled over after a dust of icing sugar. Nigel shared with us some marmalade that Allan had made up. The marmalade is so yummy, not the thick bitter rind kind that we made him to turn that into a jam making class.

Ricotta Pancake

Next up was the Ricotta Kisses, like Mangolisa had commented on my pics she was explaining to me this dish being deepfried like cekodok and so we have a cheesy Ricotta Kisses/cekodok haha. All ingredients were mixed in together to form a thick batter which is dropped into hot oil by the teaspoonfuls. We noticed that the kisses actually turned itself over when done frying on one side. How brilliant!

Frying up Ricotta Kisses

Later that night, I caught up with an episode of Axian's Food Adventure on telly. A man was showing Jason Yeoh on how to make taufu pok (tofu puffs). After slicing tofu into cubes, he dropped them into a huge wok of hot oil. The tofu behaved the same was as the kisses. It actually turn itself over when done frying. The man explained that as the bottom part of the tofu is cooked through, it became lighter hence the heavier uncooked top will roll downwards. Ooooo so that is the reason! Very educational for me indeed.

Ricotta Kisses

Anyhow, the kisses were served with a dusting of icing sugar. Crispy on the outside, cheesy and fluffy inside... very yummy. Not sure about you but I noticed that deep fried stuff tend to be extraordinary delicious even though I'm not a big fan of deep fried goods :p

Ricotta Kisses centre

Lastly, we were shown how to assemble the Cinnamon Honey Ricotta Spread. It was a very easy 5 minutes job to impress the family or guests which can be served as a bread or French toast spread or as part of a cheese/dessert course. Loved the slight creamy ricotta texture with the sweet honey and a hint of cinnamon taste.

Honey Cinnamom Ricotta

The class ended with all of us sitting down to enjoy all the yummy goodies that we have made up with a cup of tea or coffee. Nigel also took this hour as the opportunity to address any more questions from the bunch of eager beaver ladies.

A Morning of Macaroning at Academy of Pastry Arts, Malaysia

Sugar works collage

The Academy of Pastry Arts, Malaysia is the latest institute opened to learn the art of baking and pastries making. It's conveniently located at Wisma Thrifty along Jalan Barat, Petaling Jaya. Located right above Giant Supermarket, it's really easy to find. I was invited to experience a lesson on making macarons by Jade Wong of Mustard Tree Communications via FatBoyBakes. Thank you for the invite!

The academy floor space

How it looks like from your workstation

As I walked in, I'm pretty amazed with the sheer size of the academy, well that's even before we toured the entire floor space where there were separate rooms for bread making, sugar works, storage and so forth.

We were introduced to the team of the academy with Hanne Landgraf (Customer Relations Executive), Lejeune Guillame (Director of Pastry Arts), Matthias Schuebel (Consultant, 1996 Pastry Olympic Gold Medal winner) and Chef Tan Wei Loon (Pastry Chef Assistant).

He currently own a chocolate production House as Director and pastry chef in Malaysia , written couple of E books .He Specializes in chocolate, sugar and all kind of Petit fours.
Chef Matthias is the Guest Pastry chef for the Continuing Education Section.

We got on to our lesson where Chef Guillaume started off with making the raspberries fillings for the macaron first as it needed chilling before being whipped and piped onto the macarons. Then it was our turn for some hands on. Aly, Michael (Lil Chef - our bonus of the day according to FBB :p), Lyrical Lemongrass and FBB were in one team. I was in another team with the journalist & photographer from Nanyang Siang Pau, Jade and her colleague. Thank goodness for having Chef Matthias around for he showed us the proper way of folding and mixing.

Next, Chef Guillaume and Chef Tan showed us how to prepare the macaron. The ingredients were simple so was the method but the hardest part is the macaroning bit where we have to beat out all the air. Chef Guillaume made it look so easy! With the sugar and powdered almond in the meringue, the mixture got sticky and I have to gave up to pass the batter to someone else to continue the beating which Chef Guillaume mentioned the action is called macaroning!

Chef Tan Wei Loon

Next challenge was to pipe the batter into perfect sized circles. Not easy too!!! We have lots of laughs here actually as we need to make sure we have a pair of macarons in about the same size to pair up. The terms of boyfriend and girlfriend were used here hehehe

Picnik collage

Then, we practiced piping on the fillings onto the macaron before capping with its partner. We were taught how to jazz the simple macarons up with gold papers and gold-dusted hazelnuts.

After the fun filled session, we got on to what else but feasting! The academy have prepared loads of goodies for us to try and I tell ya everything was so yummy that all of us packed some back home!

Kampung Cuisine With Rohani Jelani @ Bayan Indah

Orchid collage

Last Saturday, I must be the happiest gal on earth!!! Excuse me a sec, I just have to let this out... I finally met my culinary idol - Rohani Jelani!!! :p

In case you don't know, Rohani used to develop recipes and the food stylist for Her World magazine back in the 90s. I painstakingly tore the recipe pages and have them all filed up, yes I still have them all! Actually I knew about her setting up cooking classes in her home in Kampung Sungai Penchala (Kuala Lumpur, Malaysia) after she left Her World but just like FBB, I never got round to sign up for a class until boo_licious and I received an email from Li-Hsian extending an invitation to attend one, plus got us to rope in some food bloggers along. How can we say NO right? Heh... but too bad boo_licious can't attend.

With that, Alice (Jom Makan! Good Food Trek), Audrey (Audrey Cooks), Chris (PureGlutton), FBB (FatBoyBakes), Jon (A Lil' Fat Monkey), Meena (AWOL) and myself headed over to Bayan Indah for few hours of fun in the huge open kitchen.

Rohani has since moved out of her home and turned the place into a modern styled kampung resort which she named it Bayan Indah. Within the one acre land, there's the two-storey bungalow with lots of wide and tall glass windows to let natural light shines in and for occupants to absorb in the lush greeneries; a fish pond amongst fruit trees, flower shrubs and herbs; a single-storey bungalow occupied by her helpers and an standalone structure which used to be the carpenter's workshop for private meetings or events.

lawn collage

This is everybody's dream house where tropical fruit trees and herbs are aplenty, and I spotted a large pot of rosemary too which is sooo fragrant! The herbs needed for our class were plucked straight from the garden, super fresh I tell ya.

rosemary

The kitchen and dining area are located on the ground floor whilst the upper level is where the 4 bedrooms and living area are located. There are quite a number of nooks and corners where one can do their reading. There are quite a lot of books on the shelves but mostly cook books, of course. I guess I don't need to describe how beautiful the place is, just let the pics do all the talking.

living room collage

rooms collage

As all of us have picked Kampung Cuisine, Rohani and Li-Hsian have pre-arranged with us via emails on our choice of dishes and they grouped us up accordingly. Before we start our class, Rohani briefed us over some delish cake, pastries, and coffee/tea. Rohani is so fun to be with. She's so down to earth and her witty comments got us cracking every now and then. With our banters, the briefing went on quite long, plus it's not helping when we camwhore every now and then LOL. She hasn't have a class where ALL the students kept on shooting non-stop, not even when we're in the midst of cooking.

dining area collage

Since there were 7 of us, I partnered with Meena to cook up Ayam Percik (spiced, grilled chicken), Nasi Kerabu (herb rice salad) and Masak Air Cekur Manis Dengan Ubi Keledek (green vegetable and sweet potato soup). Later on Meena took on the task to make some Onde-onde (glutinous rice balls filled with palm sugar) with some help from FBB and Jon. Funny how Rohani could tell which were the balls were made by FBB :p

The "AhPa" and "son" team cooked up a storm of Ayam Percik, Masak Air Cekur Manis using pumpkin instead of sweet potatoes and Masak Lemak Udang Dengan Nenas (prawn and pineapple curry).

Masak Lemak Udang Dengan Nenas (prawn and pineapple curry)

The team of 3 very experienced cooks - Audrey, Alice and Chris, were entasked to come up with Kerabu Jantung Pisang (banana flower salad), Ayam Percik, Nasi Kerabu and Masak Lemak Udang Dengan Nenas.

banana collage

Kerabu Jantung Pisang (banana flower salad)

Together with Rohani's explanation and prep work plus cleaning by her team of helpers, we managed to quickly cook up our dishes. Every now and then, Rohani checked on us and gave us many useful tips and tricks along as we go. It was very very informative indeed as cook books don't tell you everything. We learnt to cut our dry chillies diagonally so that it's easier to remove the seeds, how to bundle and slice the ulams, how to devine prawns and remove their "brains" and loads of other tips.

Check out this video on how to slice the ulams into hair like strands...

the spread

We finally got down and savour the dishes we have laboured over. They're all so delicious and best of all Rohani made it so easy that I can wipe off my fear of recipes with long list of ingredients. Err actually her recipes are not long at all for Malay dishes, I'm so glad :p

Thank you so much to Li-Hsian, Rohani, Wati and her team of assistants for having us, the crazy bunch of food bloggers, at Bayan Indah. We're looking forward to another session with Rohani, soon... very soon!
