Slow Cooked Pork Ribs With Black Fungus and Tofu Puff

Let me describe another lazy way to have a hearthy meal without having to do much especially the cleaning part :p All one need to do is to use their slow cooker which is usually stashed away somewhere inside kitchen cabinets or like most people would just use it to boil soups.

I've done quite a number of posts on how to cook using the slow cooker without adding much water and this is another one of it...

First, clean up one stick of chopped pork ribs, remove all the fats and scald with some hot water. Marinade the ribs for a couple of hours with maybe around 1/4 cup of water (there isn't any vegetables used hence you'll a wee bit of water), 2 cubes of red preserved beancurd, oyster sauce, dark soy sauce and a wee bit of sugar to bring out the flavour. It has to be slightly more salty as the rest of the ingredients are kinda bland.

For the first layer, place halves tofu puff on the bottom of the slow cooker.

Second layer, soaked, cleaned and sliced black fungus.

Next, layer on the ribs together with the marinade and some crushed garlic. Put on the lid and cook for 3 hours.

Towards the end of the cooking time, pour in some Shao Tsing wine and give it a quick stir. Can switch off the cooker now as the heat will continue to cook the ribs.

Dish up and serve hot with rice! The meat is superbly tender and definitely full of the red preserved tofu flavour, almost like Hakka Char Nyuk (braised deep fried pork belly with black fungus).

No wok or pan to wash, no need to clean your stove or cooking area, plus no need to mop the kitchen floor! Without counting the prep work, just need to wash the slow cooker ceramic pot, the spoon used for stirring and the serving plate! Best for lazy people like me :p

Slow Cooked Roasted Pork with Potatoes and Leeks

Recently, someone bought us a box of roasted pork (siew yuk) but it was too tough since it was mostly composed of lean meat. I've stirred fried some but there were some left over as usually Capt'n Hook would have wallopped all. So with the remainder roasted pork and those that I've stirred fried, I decided to braise them in a slow cooker, hopefully the meat will tenderised along the way.

What I did was, place some potatoes at the bottom most, followed by leeks. As for the roasted pork, I drizzle some oyster sauce, dark soy sauce with a wee bit of water over them and mix them up. Place them on top of the leeks. Drizzle a bit of garlic oil all over. Turn on the slow cooker and cook for about 3 hours.

Thank goodness the slow cooking did the meat good making them tender and juicy. Ahhh the wonders of technology...

Slow Cooked Chicken and Potatoes

Sorry for the silence. Things has not been so bright since yesterday morning, we lost a colleague quite suddenly on Sunday night but thank goodness it was rather a peaceful one. It's not easy with this one as he has 3 young kids as well, just like ST Tee. Got me into thinking mode again...

Anyway, I have this in my draft folder. Enjoy yah.

Since the discovery to slow cook food without water... it's getting easier to have some of my meals prepared. One of the better ones done in a slow cooker is this Slow Cooked Chicken and Potatoes.

Easy peasy but in order to get a more fragrant taste, I pre-fried sliced onions with garlic, soy bean paste and fermented black bean together in oil. Then dump in chicken chunks and brown them. Arrange potatoes at the bottom of the slow cooker. Placed the chicken concoction on top. Cover and cook for about 3-4 hours.

The outcome was fantastic especially so after pre-frying the aromatics!

Slow Cooked Chicken With Bittergourd

I've done Braised Chicken With Bittergourd the conventional way but as promised I've tried cooking this dish using a slow cooker after my Slow Cooked Pork Ribs recently.

This round, rather than dumping everything into the slow cooker, I fried some chopped garlic, black beans (dau si in Cantonese) and preserved soy beans (mien si in Cantonese or also known as tau chu) in some oil in a pan till fragrant. Then put in the chicken pieces. When chicken is browned, stir in bittergourd. Next, chuck them all into the slow cooker and cook for 3 hours.

I rotated the chicken pieces at half way as I've used a very small cooker. At this stage you can adjust the saltiness but since I've used enough preserved soy beans, I did not add in any salt. This was how they looked like at the end...

Scoop up and serve with rice. Not very appetising looking eh??? I didn't add in dark soy sauce haha somehow, Chinese cooking looked better in darker colour. Tastewise, it's very very good and produced a lot of yummilicious gravy that I lapped up like soup. Left over night, wahhh, tasted even better!

Slow Cooked Pork Ribs

I've read in Lilian's Food, travel, recipe and sights on how she had cooked spare ribs in a slow cooker (also known as crock pot) without adding any water. I was worried all these while what if the slow cooker crack under such circumstance. However, in her post, she reassured that did not happened when she experimented it.

So using guesstimation again, I marinaded some pork ribs with red preserved beancurd, oyster sauce, Worcestershire sauce and a bit of cornflour. Placed some chopped leek and onion at the bottom of the slow cooker. Next, arranged the ribs on top. I've used a small slow cooker that has only one heat setting and cooked the ribs for about 3+ hours.

The meat came out very very tender and fall out easily off the bones (like those canned ribs!). Very flavourful. However the leeks and onions have gotten a bit mushy since I've sliced them too finely. Hubby liked the meat but he thinks bittergourd cooked this way would be more flavourful as compared with the mushy leeks and onions. Will try that next time.

Thanks to Lilian for the insight of cooking without water in a slow cooker. Without her post, I wouldn't have done this! The best thing is all I need to clean up was the pot, no messy oil splatter all over the stove, YAY!
