Luncheon Meat Fried Rice

Lard post dedicated to Lanatir.

One of my favourite fried rice is with luncheon meat (Lyrical Lemongrass' fave too). Simply cube the luncheon meat up and fry it in non-stick pan till brown. You'll notice some oil will oozes out from the meat. Remove the luncheon meat and get rid of the oil (but if you're Lanatir, you can use the oil to cook the rice).

You can use back the same pan or change into a clean wok. Scramble some eggs in oil and set aside. Next, fry some chopped garlic till fragrant in some oil. Pour in some mixed vegetables and stir. Add in day-old rice and stir. Sprinkle in soy sauce to taste and a few dashes of pepper (I've used black for this round). Add in the eggs and luncheon meat. Stir until well mixed. Dish up and serve hot!

Please take note that the YiGe brand (green can) luncheon meat is the recommended choice other than MaLing (with the red stamp on the cover). I have to state this otherwise Lanatir guru will whack me again hehehe...

Corned Beef With Diced Capsicum and Onion

Follow up with my earlier corned beef recipe, I did this with the other half of the can. Fry onions in some oil till translucent before adding in cubed capsicums. Add in corned beef next and sprinkle with loads of black pepper. Dish up and serve while it's hot.

Quick Corned Beef Snack

Should you have a snack attack in the middle of the night, some canned food would do wonders to the appetite! Hubby got back almost midnite one day and he was crying hungry. I looked thru the larder and found one can of corned beef. At that unGodly hour, I was too lazy to fire up the stove to do any cooking or cleaning, so the microwave oven came to play, else it will be used basically to heat up food in the household or cleaning/sterilising dish sponges.

What I did was dice up some onions and yellow capsicum. Heat up some olive oil in a glass casserole dish on high for 1 minute. Chuck in the onions and cook on high for another minute. Next put in the capsicum and stir to mix well. Cook on high for another minute. Pour in the corned beef and stir. Be careful here cos the contents sizzle a bit. Cook on medium for about 3 minutes or more. Crack in loads of black pepper and mix well.

Sardine Fried Rice

I first ate this fried rice at my sister-in-law's place. I was blown over by the simplicity of this dish. I couldn't have imagined that a can of sardine in tomato sauce can do wonders for a fried rice dish. Since then, hubby had told me this is their family favourite. He had cooked this for me before but I have since perfected it.

All one need are just a can of sardine in tomato sauce, day old rice, french or long beans and seasonings. That's it, very simple. Mash the sardine up together with the tomato sauce, hubby likes them all mashed up finely where else I like mine chunky, so it's entirely up to you what kind of texture you like. Squeeze in a bit of lemon juice if you fancy some tang.

First heat up some oil in the wok. Pour in the diced french beans which worked best for this dish. You may also add in some diced onions. Next add in some salt. Stir and dump in the rice. Mix throughly to coat the rice with the oil before pouring in the sardine. Stir fry to coat the rice with the sardine until evenly. Remember to eat this fried rice while its hot, otherwise, store them in the rice cooker with the keep warm setting until you're ready to eat them.

Canned Meat And Dou Miao Fried Bee Hoon

I've some leftover canned pork ribs in the fridge which hubby didn't managed to finish a couple of days ago, a bag of dou miao (Mandarin for peas shoots) and another bag of carrot. After much thinking, I decided to fry some bee hoon using them. Took the ribs out and removed the oil that has set in the dish... ahhhh a wonderful way to remove excess fats! Minced some garlic, cut carrot into strips, wash the dou miao, soak the bee hoon and voila, can start cooking already.

Add oil into hot wok and put in the garlic. Fry for awhile before add in the dou miao and carrot strips. Stir and coat them evenly with oil. Next dish them up and set aside.

Put in the pork ribs with the gravy and all into the wok. It's not necessary to add in oil as there will be some remnants left in the gravy. Pour in some water (the amount should correspond with the amount of bee hoon you have) and wait for it to boil. Season to taste with salt and pepper. Next add in the soaked bee hoon. Cook till its soften. Add in the dou miao and carrots. Stir and mix evenly. Once the gravy is dried up, you can dish up and serve. Best eaten hot!
