Sometime last year, the food blogsphere was bombarded with scores of Donna Hay's Peanut Butter Cupcake so much so that Barbara of Winosandfoodies.com started off Hay Hay Its Donna Day event with this Peanut Butter Cupcake recipe. Check out the gorgeous cupcakes in her roundup.
At that time, I was pretty busy with work and all, so I didn't have the time to bake any for the event. I got acquainted with the recipe again after I've gotten Donna Hay's Modern Classic's Book 2. I've made these cupcakes long ago in 2 different batches but never gotten the chance to post them up until today.
After going through the round ups last year, I've some mental notes to swirl the cupcakes with different stuff, other than the popular peanut butter and Nutella, available on hand ranging from kaya (this one inspired by boo_licious), jams and so forth.
These are the original Peanut Butter Cupcakes. The larger picture showed a more browned cupcakes since I've baked that batch slightly longer.
These Pandan Kaya Cupcakes were inspired by boo_licious' usage of kaya. I liked this one a lot as the pandan kaya gave the cake a very light pandan fragrant whilst keeping the cake moist.
I've combined peanut butter and strawberry jam (from Cameron Highlands) for this cupcake. Loved this too as it reminds me of peanut butter and jelly sandwich.
Strawberry Jam Cupcakes...
Blueberry Jam Cupcakes, an alternative to fresh blueberries which can only found in supermarkets like Cold Storage or Village Grocer plus it's cheaper too! Errr the colour doesn't looked very appetising even though it's moist and tasty. And on the right is another one with pandan kaya but I've mixed some green tea powder into the batter. This Green Tea Pandan Kaya Cupcake (what a mouthful!) emits a very lovely green tea aroma (even though the colour did not turned green) on top of the pandan kaya.
Hahaha... a lot of variations huh? Since the recipe made exactly 12 cupcakes, I've swirled at least 3 different ingredients in one batch of cupcakes for variety sake. Fancy making another wave in the blogsphere?? Haha...
