Leek, Potato and Roast Pork Stew

Leek and Potato Siew Yuk Stew

Whenever we have leftover roast pork, I tend to cook up Stir-Fried Roast Pork with Garlic. On lazy days, one-pot rice with roast pork would be a great solution. The other common dish is Stir-Fried Roast Pork with Leek.

This time round, I decided to use up the roast pork with some potatoes that I need to clear from my larder. I have to make a dish that agrees with BoiBoi who tends to change his taste these days so often that at times, we can get quite lost. At days, he would love to eat chicken drumstick but somehow these few weeks he's not into chicken. I know with this dish, at least he would love the potatoes! I still can't decide if he really into roast pork as it has its days too sighhh...

I got some thinly sliced leeks and onions to give it some flavour. I browned them in some oil before adding the roast pork. Gave them a stir before putting in cubed potatoes. Pour in some water until barely cover the meat. Next just add in oyster sauce to taste and some white pepper. Oh yea and a wee bit of sugar to bring out the flavours. Put on the lid and let it simmer for about 15 - 20 minutes before dishing up and serve with rice. Easy peasy and was glad that BoiBoi ate both the potatoes and roast pork plus lapping up the "soup" hehe

  5. gee... I dunno if I will eat the roast pork coz I prefer it to stay as the way it is! Once you stew it will become soft and not as crispy.. doesn't taste like roast pork anymore.

  7. Methinks my mom would sympathise with you (or envy you, depending on how you look at it) as she had a difficult kid to please at mealtime (i.e. me) since I only liked very few foods as a kid, and she got so bored cooking the same few dishes over and over again! :P
