Cooling Drinks for Hot Weather IV

Next up is something that my mom made... it's Sea Coconut, White Fungus, Dried Longan and Gingko Tong Shui (sweet soup in Cantonese). Quite a mouth full eh??

It's another great cooling drinks for our body. This is something yin I guess. The sea coconut is fresh which we can get them easily from the wet market or supermarkets here in Malaysia. Peel off the hard brownish outer layer, wash them up, then sliced them across. You'll get something that looked like and oval ring.

Soak the white fungus in water until it soften. Remove the hard bits. Wash them throughly as there can be bits and piece of UFO (Unidentified Floating Objects) hide in between them. This can be omitted though.

Crack the gingko shells and peel of the brown layer. Remove the bitter centre and wash. Quite tedious huh... but the outcome is well rewarded.

Dump all the ingredients in a pot of water. Boil for about an hour or so until the water in the pot has reduced about one quarter. Add in rock sugar to taste and serve it either hot or cold.

  2. errrmmm almost, in fact you could just pick and cook those ingredients according to wat you fancy with the basic ones like longan, gingko & rock sugar. use different mixes of ingredients each time. taste wise about the same just the different textures you bite into only.
